This is one of favorite recipes because normally it serves as a double mealxs. I found this recipe somewhere on Pinterest (if you know the link, please share in the comments—I can’t find it in the labyrinth that is my Pinterest boards . . .) It was so easy I only used the actual recipe one time before just tossing everything in the crockpot sans directions (my favorite kind of cooking). Meal number one is chicken tacos. In the morning, I’ll put a bag of frozen chicken and a package of taco seasoning in the crockpot on low and let it cook all day. About an hour before dinner I dump an entire jar of salsa (our favorite is On the Border) and shred the chicken. Add your fixin’s of choice, toss on a tortilla, and enjoy!
Meal number two is a chicken taco soup. With the leftover shredded chicken, I add a box of chicken broth, and a can of corn. I love black beans in mine as well, so I’ll open a jar so I can add to mine (I also add jalapeños and saracha sauce). Eat on a bed of chips (or not . . . it’s good either way) and you have a yummy soup! *Note: with the second day soup, you could put back in the crackpot around midday, add everything, and just let simmer all afternoon.
