One of my favorite features over at this blog is her 40 loaves of bread in 2011. I’m thinking about doing a similar feature only with soups. I love soups and it is now soup season — YES!!
Soup No. 1: Lasagna soup using this recipe I found a couple week ago.
Adjustments: I did substitute “bow tie” pasta for the mafalda or fusilli pasta as I couldn’t find either of these at Wal-Mart and it’s pasta… I didn’t really want to go all over town trying to find the right pasta when it’s just cut differently. I also left out the diced tomatoes (as the dudes I cook for don’t like tomatoes) and basil — because I didn’t have any on hand.
Notes: The first time I made it, it wasn’t very soupy… more pasta-y, but it was still oh so yummy.
Review: This recipe is highly highly recommended. I’d go to the store right now, get all the needed supplies, and have it tonight for dinner. You will not regret it. This soup will probably be a staple around here this winter.
