I have one word for the mid-way check up. Eggs.
Holy cow have I been eating all the eggs! I think my favorite so far is eggs, mushrooms, and kale. June to December of last year, I didn’t eat any meat, so I’m still trying to keep my meat intake to a minimum—mostly just once a day, if I do have it, and it’s been mainly at dinner (I did just see a recipe for some kind of greek burger on Whole30’s Instagram page and I’m pretty sure I’m going to be making those these week.)
I’ve also been drinking black coffee (yes, black!) I’m feeling all adult-ish. The trick I’ve found it (1) pour over and (2) don’t make it overly strong. Really. It’s not a how strong you can drink it contest. I’ve been getting whole bean and grinding it myself as well. My favorites are Mexico GRAPOS Siltepec from DoubleShot Coffee Company and Coffee and Contemplation (Stranger Things!!) blend from Book Lovers Coffee.
